Healthy Meal Prep

I really need to get back on track with my diet and meal prep before the week begins in order to succeed and hit my goals. When the virus started and I began working from home, meal prepping every Sunday went by the wayside. We weren't making the best choices, and well, lets just say my husband can eat what he wants and still have a six pack whereas I...cannot. Here's to a healthy recipe.


  • 1 Tablespoon Minced Garlic 
  • 4 Roma Tomatoes 
  • 3-4 Green Onions
  • 7 oz Tomato Sauce
  • 1/2 Package of Mushrooms 
  • 2 Cups of Spinach 
  • Mozzarella Cheese - for topping 
  • 3-4 Breasts of Cooked Chicken  
  • 1 Turkey Kielbasa Sausage 
  • 12 oz of riced cauliflower 
  • Mozzarella cheese 


  1. Chop up tomatoes, onions, and mushrooms 
  2. Heat 1 tbsp olive oil in pan 
  3. Add the tomatoes, onions, mushrooms, garlic, and spinach to the pan 
  4. Simmer over medium heat 
  5. Add in 7 oz of tomato sauce 
  6. Chop up the turkey kielbasa sausage and chicken breast 
  7. Add chicken breast and sausage to the pan 
  8. Simmer for 5-10 minutes 
  9. Steam riced cauliflower in the microwave 
  10. Stir in riced cauliflower 
Before serving sprinkle mozzarella cheese on top
