Sunday Meal Prep

This week I went to the store for the first time in two weeks. We are trying our best to not frequent the store and stay at home as much as possible. I am also working from home most days, making it easier for me to cook during the week. We postponed our family trip to Florida, so I welcomed all the baked goods and treats into our lives this week. 

On the menu this week:

Salad + Chicken
Chicken + Rice + Asparagus 
Egg Salad Sandwiches
Chicken Tortellini Pasta 
Breakfast Tacos
Chocolate Chip Muffins 

Sharing with you this week, my two favorite muffin recipes.


Chocolate Chip Muffins




Ingredients 
  • 2 3/4 cups flour
  • 1 tbsp + 1/4 tsp baking powder
  • 1 tsp baking soda 
  • 1/2 cup butter 
  • 1 1/4 cup sugar
  • 3 eggs
  • 1/2 cup milk 
  • 1 tbsp vanilla
  • 1 1/2 cups milk chocolate chips 
Instructions 
  1. Pre-heat oven to 375F
  2. Place muffin liners in the muffin tin and spray with cooking spray 
  3. Combine dry ingredients together in a bowl
  4. In a separate bowl mix together all wet ingredients 
  5. Pour the wet ingredients into the dry ingredients until combined. Stir until just combined, do not over mix. 
  6. Add in the chocolate chips 
  7. Scoop out batter into muffin liners, 3/4 the way full 
  8. Bake in the oven for 15-20 minutes or until lightly brown on top
Applesauce Muffins 

Ingredients: 
  • 2 cups flour
  • 2 tsp cinnamon 
  • 1 1/2 tsp baking powder 
  • 1/2 tsp baking soda 
  • 1/2 cup butter cream butter
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 2 tsp vanilla extract
  • 2 eggs
  • 1 cup unsweetened applesauce
Instructions: 
  1. Pre-heat oven to 375F 
  2. Place muffin liners in the muffin tin and spray with cooking spray 
  3. Combine dry ingredients together in a bowl
  4. In a separate bowl mix together all wet ingredients 
  5. Pour the wet ingredients into the dry ingredients until combined. Stir until just combined, do not over mix.
  6. Scoop out batter into muffin liners, 3/4 the way full 
  7. Bake in the oven for 18-20 minutes or until lightly brown on top
