Sunday Meal Prep

We are trying our best to not visit the grocery store often, as we work to self isolate. This last week has been, well...odd. I am working out of the house most of the time, keeping the kids home part of that time, and our gym is closed. I am trying my best to stay in routine, and take control of the aspects I can in fact control. I am still working out at least 4x a week, meal prepping, keeping the house tidy etc. These routines keep me on track!

Unlike every other weekend, Alex was actually off and not working. Like most we spent the weekend tidying up the house, playing with the kids, and cooking for the week.

On the menu this week:

Salad + Chicken
Egg Salad Sandwiches
Spaghetti
Tacos + Taco Bowls
Pork Balls + Potato Casserole + Asparagus
Egg Bake

Pork Balls



Ingredients:
  • 2 lbs Pork 
  • 2 Eggs
  • 1 Tbsp Minced Garlic 
  • 1 Tbsp Paprika 
  • 1 Cup Italian Breadcrumbs 
Instructions: 

  1. Preheat oven to 350F and Spray 9x13 pan 
  2. Mix together the pork and eggs till combined 
  3. Add the rest of the ingredients ensuring everything is mixed well 
  4. Using a spoon scoop out mixture and form golf ball sized meatballs and place on pan
  5. Cover with homemade sauce 
  6. Bake for 30 min


Homemade Meatball Sauce

Ingredients: 
  • 1 Cup Ketchup 
  • 1/4 Cup Mustard
  • 1/4 Cup Brown Sugar 
  • 2 Tbsp Water
Instructions: 
  1. Mix all of the ingredients together
Tips: 
  1. If you want a sweeter sauce add more brown sugar 
  2. If you would like a thinner sauce add more water
  3. Add vinegar if you like a tangy sauce
